Lahpet, which means “green tea”, and thoke, which means “salad”, is aneclectic mix of flavors and textures that includes soft, pickled tea leaves, crisp, roasted peanuts and other crunchy beans, toasted sesame seeds, fried garlic and, if you like, dried shrimp and chopped tomato.In order to prepare lahpet, thebest young tea leaves are picked, quickly steamed, then packed into bamboovats or tubes and pressed with heavy weights for varying lengths of time. Shan-style rice noodles, which are kneaded with turmeric oil, are thin, flat, sticky and delicious. Ngapi” means pressed fish. Fish paste and shrimp paste are the two kinds of Ngapi.It is usually dried in the sunlight after making from the fermentation of salted ground fish or shrimp.Like most dishes, there are regional variations of ngapi: it might be very salty or not salty at all, watery or thick, made with ocean fish or freshwater fish depending on the location.It is used in a versatile manner in that it is used in soup base, in salads, in main dishes and also in condiments.
